Distinguishing Features of the Work

Is responsible for the preparing and serving of food in a correction’s facility.

Supervises food production workers. May report to a higher-level food service specialist or other administrator.

Positions allocated to this class may serve either as the charge position in a small facility or as the principle assistant to a higher level food service specialist in a large facility.

Develops or assists in the development and observance of the facility budget. Hires, trains and supervises staff in food preparation and service, and in housekeeping and maintenance functions. Staff in some facilities may include inmates.

Orders food supplies from central stores and from outside suppliers. Is responsible for observance of established nutritional standards, and for compliance with sanitation and other regulations prescribed by federal and state statutes, and agency guidelines.

 

Qualification Guide

Knowledge of volume food preparation and serving. Knowledge of nutritional standards and sanitary regulations. Ability to develop budget information and operating procedures. Ability to hire, train and supervise staff which may include inmates.

Graduation from high school and experience in food preparation and serving; or an equivalent combination of training and experience.
